Stew chicken is one of the dishes frequently cooked in Trinidad and in my own kitchen. I pair it with a lot of different dishes. My family loves my Stew Chicken, especially with macaroni pie!
However stew chicken is so versatile that I even pair it with mashed potatoes and green beans for a nice hearty dinner.
Let me show you how to make The Best Stew Chicken!
INGREDIENTS:
PREP CHICKEN:
– 3lbs Chicken (cut into small pieces)
– 2-3 tbsp Green Seasoning
– 2 tsp Salt
– 1tsp Black Pepper
– 1 tsp Paprika
– 1 tsp All-Purpose Seasoning or Adobo (Mixed Seasoning)
HEATING:
– 2-3 tbsp Olive Oil or any oil of your choice
– 2 tbsp Brown Sugar
SEASONING AND SPICES:
– 3 Cloves of Garlic, Minced
– 1 tsp Ginger, Minced
– 1 Pimento pepper or any flavoring pepper
– 1-2 tsp Soy Sauce
– 1 tsp to 1 tbsp of Ketchup (you don’t need too much)
LIQUIDS:
2-3 cups of Water
INSTRUCTIONS:
1. Cut chicken into small pieces, or your desired size.
2. Clean and wash the chicken with white vinegar or lemon juice. Place in a colander and allow all the liquid to drain.
3. Then, season the chicken with green seasoning, salt, black pepper, paprika and all-purpose seasoning. Mix well and allow to marinate for a minimum of 30 minutes, or longer. (Also can be left over night to marinate)
4. In a sauce pan, add oil to pan and allow to heat. Then add the add brown sugar. Allow the brown sugar to become brown and caramelized before adding chicken. Stir with a dry spoon to prevent it from clumping and burning in the pan.
5. Then add chicken. Mix well and let all the pieces brown, turning it frequently to allow all the piece to cook evenly.
6. Add garlic, ginger and onion. Mix well and allow the chicken to cook until the liquid has reduced on the pan. (Or allow the liquid to reduce to the amount of sauce/gravy that you would prefer.)
7. Add flavouring pepper and hot pepper to your taste. Mix well and simmer for 2-3 minutes.
8. Then add 2-3 cups of water and simmer for 10-15 minutes on medium heat, until the sauce has thickened.
9. Taste for salt and add as desired.
10. Remove the sprigs of thyme before serving.
Suggestions: Serve with rice, roti or pasta.
