A restaurant that has been in existence since 1958, Mangala Vilas in Salem is known for its entirely non-vegetarian menu that features homestyle dishes made using spice blends ground fresh every day.
In this episode of Gourmet On The Road, Food Lovers Editor, Kripal Amanna visits the relatively newer, 15-year-old outlet of Mangala Vilas on New Bus Stand Road Salem to savour a hardcore robust non-vegetarian feast!
Before getting to the table he visits the kitchen to watch the making of the signature Mangala Base Masala made with either Naatu Kozhi or Mutton that is used in the making of every dish on the restaurant’s menu. He then tastes 12 of the most dishes as part of an early dinner, ordering the Kothu Parotta, Vanjaram Fry, Naatu Kozhi Leg Roast, Mutton Pepper Fry and more!

this vanjaram or seer fish is fried to perfect scrumptiousness. the right amount of masala crusts this flakey, meaty fish. eat it when it’s steaming hot to enjoy this fry to the fullest!

visually, you can see the brown, roasted masala, the signature mangala masala. this is a robustly flavoured chicken curry. my curry had no chicken in it, you can still taste the meaty flavours in the gravy! perfect to mop up with the fluffy salem dosa.

although this gravy starts out with the same base ingredients as the chicken curry, you can taste the creaminess of the mutton fat rendered with meat into the aromats and spices that make the curry. the mutton is super soft (a result of being cooked for over an hour).

this huge thigh piece of the country chicken looks super appetising! the meat is moist and pink on the inside and tastes like you’re eating red meat, that’s how intense its flavours are!

the naatu kozhi is shredded and fried with pepper, curry leaves and the chicken curry in this dish. the pepper notes are much more in-your-face, it is almost like an intensified version of the chicken roast.

in this pepper fry you taste the flavour of the meat, the pepper does not outshine the flavour of the mutton like it did in the chicken pepper fry. the meat is cooked to a soft juiciness. the fat encasing the meat tastes divine in every bite! a delicious mutton pepper fry.

i love the deep, umami flavours of this country chicken liver. the liver is cooked to a powdery softness. the gravy tastes more robust and savoury in this preparation.
