When I first started smoking for larger BBQs (125 people), I lost a lot of time preparing the meat to go into the smoker. As I’ve continued to do large events, I stumbled across a process that works really well for me, and has cut my prep time dramatically. It is a pretty basic assembly line approach, but I figured I’d share it with you in the hopes that it saves you some time.
