Today I am sharing with you some of my favorite healthy meals to lose weight. I recently lost 45 pounds with baby number 3 and these are some of my favorite low carb meals that I often cook. All of these are also healthy meal prep ideas on a budget that you can cook for your family.

SKINNY SPAGHETTI
1 spaghetti squash
1 jar of Rao’s spaghetti squash
1 onion
1 lb ground beef
2 tbsp minced garlic
-cook squash according to link above. in a skillet combine the rest of the ingredients into a skillet and make sure you cook the meat completely all the way through. Shred squash and top with sauce from skillet and enjoy!

PICO CHICKEN
1-2 lbs chicken
2 cups of pic
1 cup of mozzarella
-spray a casserole dish and chop your chicken into cubes. cook in the oven at 400 for 25 minutes/until chicken is cooked all the way through. take out of the oven and top with pico and cheese. place back in the oven for five minutes to melt. Eat how it is or on corn tortillas with lime and cilantro.

GROUND BEEF STIR FRY
1 lb ground beef
1 frozen broccoli
1 cup frozen spinach
1 bag frozen veggies
1-2 tbsp minced garlic
1/4 cup of soy sauce, Worcestershire sauce or coconut aminos
2 cups of brown rice or quinoa
-cook the ground beef with garlic in a skillet until brown. add in veggies and let simmer until cooked unfrozen. place on top of cooked brown rice or quinoa and enjoy.

BROCCOLI CHICKEN CASSEROLE
2 bags frozen broccoli
1-2 lbs chicken
1 container of ricotta
1 jar of marinara
2 cups mozzarella
1 lb pasta(i used banza)
-cook pasta on the stove and grab a skillet to cook chicken first. season it with salt and pepper and cook until no longer pink inside. add in the marinara and ricotta and stir well. add in broccoli and pasta and mix into the skillet. pour into a greased casserole dish and cook at 400 for 20 minutes. top with mozzarella when done and enjoy.

SKINNY BREAKFAST HASH
2 cups of frozen peeled and chopped sweet potatoes
1 small can of green chili
cilantro
1 lb ground breakfast sausage
1 can of rotel
12 eggs
1 onion chopped
1 red bell pepper chopped
-cook sausage first and then start adding into the vegetables. add in eggs last and stir occasionally, making sure to cook the eggs all the way threw. top with cheese and salsa or enjoy on corn tortillas.
