Large Family Meal Ideas // WHAT WE EAT CAMPING

We just got back from vacation! We left just 2 days before everything with the CoronaVirus hit! It was a little unsettling to be away from home at such a time, but we were still able to have a wonderful vacation! We were gone 10 days and we ate 28 out of 30 meals in the camper! Check out this video for some delicious meals to serve your family, camping or at home!

It has come to my attention that it is not safe to travel while cooking food in the oven. (see pinned comment)

Recipes:

Crowd pleaser! :
*Ham and Swiss Sliders*
1lb sliced ham
24 slices Swiss cheese
24 Hawaiian Rolls
mayo and/or miracle whip
1 1/2 sticks butter
1 heaping tsp. poppy seeds
2 teaspoons Worcestershire sauce
2 teaspoons mustard
1/2 teaspoon garlic powder
2 teaspoons dried onion

In a small bowl I like to mix a little miracle whip and mayo together and spread a super thin layer onto the inside of the roll. Place a slice of swiss and ham onto each, and place them all into a large baking dish very close together.
In a small sauce pan, melt the butter, set aside, and stir in all the other seasonings. Pour evenly over rolls. Cover and refrigerate for 2 hours.
(Or if you are camping: Freeze in an air-tight bag before you add the butter and seasonings)
Bake covered at 375 degrees for 20 minutes, then 5 minutes uncovered ’til golden and crispy.

*Raisin Bagel Breakfast Bake*
For you recipe lovers, I created a version of this:

I simplified it and just mixed some melted butter, eggs, milk and cinnamon, with a splash of maple syrup in a bowl and poured it over the raisin bagel bits. Then when it came out, I added some maple syrup to some whipped cream cheese and drizzled it over the top!

*My Mama’s Taco Salad*
No recipe really I just…
-chop up a head lettuce or 2
-add some fresh diced tomatoes
-a can of black beans, drained and rinsed
-add some fresh raw sweet corn, sliced off the cob, if it’s in season
-precooked and chilled taco meat, made from ground beef
-add some taco seasoning to thousand island dressing and mix through.
-top with shredded cheese and crushed Doritos
