Recipe Instructions:
Egg Bake
6 eggs
2 tbsps milk or heavy cream
2 cups baby spinach
1 clove garlic
1 tbsp olive oil
2 tbsps sun dried tomoatoes
2 tbsps feta cheese
salt & pepper to taste
In a bowl, whisk egg with milk or heavy cream until frothy. Pour into measuring cup.
In a sautee pan on medium high heat, add olive oil and garlic. Sautee until fragrant. Add baby spinach and cook until spinach is wilted and slightly charred.
In a cupcake pan, add sauteed spinach, a little bit of sun dried tomatoes and feta chese (divided). Pour egg mixture into cups evenly. Bake at 325 degrees for 20 minutes or until tops of eggs are golden brown. Remove from oven and cool for 5 minutes. Enjoy!
Pizza Dough Cinammon Rolls
1 packet of pizza dough (1 lb)
4 tbsps melted butter
1/4 cups white sugar
1/4 cups brown sugar
1 tbsp ground cinammon
2 tbsps AP flour
1 tsp vanilla extract
In a bowl, mix butter, sugars, cinnamon, AP flour, and vanilla extract. Mix well and set aside.
Remove pizza dough from packet and dust with flour. Roll into rectangle shape and spread cinnamon mixture to cover. Starting from the bottom, roll the dough up. Slice into even slices and place into baking pan. Let rest for 15 minutes and bake at 375 for 25 minutes.
While baking, make cream cheese icing.
4 oz cream cheese, room temperature
4 tbsps unsalted butter, room temp
1 1/2 cups powdered sugar
2 tbsps milk
1 tsp vanilla extract
Mix all ingredients together until combined.
When cinnamon rolls are ready, pull from oven and let cool for 5 minutes. Spread cream cheese frosting to cover. Enjoy!
Cali Style Burritos
5 eggs
1/2 cup black beans
1/2 cup shredded cheddar cheese
1/2 cup crumbled breakfast sausage
1/4 cup salsa
1/2 of an avocado
5 burrito style tortillas
In a pan on medium heat, scramble eggs until halfway done. Add in black beans and continue scraping the bottom of pan until eggs are fluffy. Remove from oven and transfer to bowl.
Place tortilla on a plate and heat in microwave for 30 seconds. Add in 1/4 cup egg mixture, then layer with sausage, cheese, salsa, and avocado. Fold in sides of tortilla and roll into a burrito. Wrap with foil and enjoy!
