Buckwheat Waffles (makes 2)
1/4 cup buckwheat flour
1/2 cup oat milk
1 tsp apple cider vinegar
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp baking powder
Whisk everything together, adding more milk if necessary!
The trick is to let the batter sit! This is why I don’t preheat my waffle maker. Once the batter is done I turn the the waffle iron on, wait for it to heat up and cook!
You can obviously add more flavorings like a dash of sweetness or some vanilla essence etc
Ful is one of my favourite dishes! I have it all the time when I’m visiting my best friend from Armenia.
1 tin chickpeas
1 tin fava beans
Salt
1/2 tsp cumin
1/2 tsp chili flakes (add more or less depending on your heat tolerance)
1 red onion
Chopped tomato
Chopped parsley
Lemon juice
Place beans in a pot with a little bit of hot water and turn on the heat. Add seasoning and start smashing with a fork until it gets a a chunky yet smooth consistency. Take off the heat and place in a serving dish. Top with tomato, parsley, onion and lemon juice. You can also add olive oil on top!
This is traditionally he for breakfast! Such a hearty breakfast I love it.
